Charlie's Cheesecake

Ingredients

500g Mascarpone Cheese
2 limes
1 tablespoon icing sugar
1 packet ginger biscuits
2 oz butter

Method

For the base melt the butter and bash the biscuits (I do it in the food processor) and mix together.  Press into the bottom of cake tin (I use one that you can push the bottom out of the sides – if that makes sense!).

To make topping zest the limes and squeeze out the juice (2 is usually enough though it depends on your taste) mix into the mascarpone with the icing sugar and put carefully on top of biscuit base and chill.
